Learn to Cook- Quinoa Stuffed Peppers

November 11, 2012 4:00PM EST I will be on Learning to Cook Caribbean with Larry Fournillier on Google Plus Hangouts On Air.  For this episode I decided to make my Quinoa Stuffed Peppers. I made them recently for a family function and they were a big hit so I thought I would share the recipe with you!

Here is the recipe;

Quinoa, portabella, corn and spinach stuffed peppers.

2 cups vegetable stock
1 cup quinoa
4 tbsp olive oil or grape seed oil divided
2 cloves garlic minced
1/2 cup chopped onion
2-3 green bell peppers prepared for stuffing- tops cut off.
2 portabella mushroom caps
Baby spinach
1-2 ears of sweet corn or 1 can of sweet corn drained
salt and pepper
Portabella and Corn will be grilled. start grill, set to medium high add salt and pepper and oil to caps, salt pepper to corn and grill for 15-20 minutes.
Heat pan to medium heat, add oil, garlic, onion.
Stir for 5 minutes to start to soften and brown oniin.
add 2 cups of vegetable stock continue to heat until stock is simmering.
add quinoa, reduce heat a little. simmer for 5 minutes and add chopped mushroom and corn.
continue to cook until stock has simmered off and the quinoa starts to show the “ring”

remove from heat add to mixing bowl, toss spinach leaves and fold them in.
stuff peppers and add to oven at 350 for 20 minutes.
