So I am over a month in to living a whole food, plant based diet and I have to say, so far so good. I find myself making new and interesting things. Last weekend, my mom visited with to see my kids and brought Wheat Berry Salad and it was awesome! I made these great Baby Bella Kabobs. I am ashamed to admit I have never had a PortaBella mushrooms before and absolutely loved them!
I love the opportunity to cook and try new things and I plan on expanding my Plant Based repertoire further! I thought this would be a huge challenge not having meat of dairy. It has not. Onward and upward!
